Heat a griddle or cast iron skillet pan on a medium to low heat. Place the flour and salt into a bowl and pop in the bicarb soda; make a well in the center, and pour in the buttermilk.
Work quickly to mix into a wet dough; knead very lightly on a well floured surface. Form into a flattened circle, about ½ inch thick and cut into quarters with a floured bench scraper or knife. This dough will be quite sticky so take care guys!
Sprinkle a little flour over the bottom of your hot pan and cook the soda farls for 6 to 8 minutes on each side or until golden brown. You can also cut these open (aka halved) and toast the interiors so you get a more even browning and will then make 8 farls rather than 4.
Serve warm, smothered in salted butter and jam or honey or meltes cheese.
