Linzer Cookies, called Linzer Augen 👀 in German, are made with a simple „Mürbteig“. No baking powder, no flavoring, no nuts. The filling is traditionally apricot jam. The three holes on the top make these cookies immediatley recognizable ❤️

Dough recipe, 1-2-3 dough
100g powdered sugar
200g cold butter
300g flour
1 yolk
(Scale up to your needs)
Swiftly knead dough. Chill for an hour. Roll about 3mm thick. Use fluted round cookie cutters, and a round piping tip for the top cookie.
Bake about 12 mins at 360F / 180C until edges start to slightly brown.
Dust the top with powdered sugar before assembling.
Some also use thinly sliced almond for the top cookie - apply before baking.
Make sure to have no lumps in your apricot jam. I use a sieve for that.
