Cook noodles of choice according to package directions
Julienne the English cucumber
Julienne the large carrots
Shred the red cabbage
Cube the avocado
Cube the yellow mango
Divide the noodles, cucumber, carrots, cabbage, edamame, avocado, and mango between two serving bowls
Add all peanut sauce ingredients (lime juice, peanut butter, rice vinegar, maple syrup, sriracha, coconut aminos) to a jar
Use a fork to whisk and combine the sauce ingredients, adding water if needed to thin
Drizzle sauce over bowls
Sprinkle with sesame seeds and enjoy
