Tuna, Bean And Red Onion Salad
  1. Finely slice red onion. Pickle with Vinegar and some salt. Set aside 5 mins

  2. Chop the tomatoes into large circles and arrange as the base

  3. Combine the preserved tuna in olive oil with the cooked white beans

  4. Mix the tuna and beans with the red onion

  5. Dress with white wine vinegar and extra virgin olive oil

  6. Add fresh parsley for freshness

  7. Serve over the tomato base
