Add a few lemon and ginger slices to a clean jar.
Pour raw honey to cover the slices.
Repeat the layers until the jar is nearly full.
Leave about ½ inch of space at the top.
Cover loosely with a lid or cloth.
Let it sit at room temp for 14-30 days, stirring daily.
Once it's bubbly and syrupy, store in the fridge. It can lasts up to 6 months in the fridge.
