Mediterranean Chicken Bowls
  1. Add chicken breast, Greek dressing, chicken broth, and sliced red onions to crock pot

  2. Cook on high for 4 hours or low for 6 hours

  3. Shred chicken and mix back into the juices

  4. Dice cucumber, bell pepper, and tomato

  5. Rinse and drain chickpeas

  6. Roughly chop kalamata olives and pepperoncinis

  7. Combine all vegetables in a bowl with feta cheese, olive oil, lemon juice, oregano, salt, and pepper

  8. Cook rice and add turmeric, pepper, and butter

  9. Assemble bowls with shredded chicken, vegetable mixture, and rice
