Butterfly and slice the chicken breast into 8 thin strips.
Season the chicken with 1 tsp salt, 1.5 tsp smoked paprika, 1 tsp garlic powder, and ½ tsp cayenne pepper.
Prepare the seasoned flour by mixing 200g all-purpose flour and 100g potato starch with the same seasonings.
Dredge the chicken strips in the seasoned flour, coating them lightly.
In a bowl, mix together the honey garlic sauce ingredients: 4 minced garlic cloves, 80ml low-sodium soy sauce, 80ml water, 10g minced ginger, 40g honey, and 1 tsp potato starch mixed with water.
Heat a pan or air fryer to 400°F (200°C) and cook the chicken tenders for 8-10 minutes, flipping halfway, until golden brown and cooked through.
Toss the cooked chicken tenders in the honey garlic sauce and serve immediately, garnished with parsley flakes if desired.
