Courgette, Pea And Feta On Toast
  1. Use a vegetable peeler to cut the courgettes into delicate ribbons. Salt, leave for 5 mins, then squeeze out excess water.

  2. Toast the bread

  3. Mix the courgette with crushed peas, lemon zest & juice, chilli flakes, mint leaves, salt & pepper and olive oil

  4. Top the toast with the courgette ribbons mixture and crumbled feta cheese
