Pour one can of full fat coconut milk into a pan
Add 2-3 tablespoons of soy sauce
Add 2-3 tablespoons of distilled vinegar (cider, red, or rice vinegar)
Grate 1 garlic clove on a microplane and add to the pan
Add 2-4 tablespoons of red or green curry paste, starting with a small amount and tasting to adjust spice level
Stir in 2-3 tablespoons of peanut butter
Mix in roughly chopped bok choy pieces
Add your favorite frozen dumplings to the sauce
Coat all dumplings in the coconut milk and arrange them seam side up
Transfer to a 450 degree oven
Bake for 15-20 minutes, checking package directions for specific timing
Optional: top with chili crunch before serving
