15-min Roasted Red Pepper Gnocchi With Crispy Lentils And Pesto
  1. Add cooked and rinsed lentils, olive oil and spices (garlic powder, Italian seasoning, nutritional yeast, salt and pepper) to a bowl and mix until well combined

  2. Add lentil mixture to lined air fryer basket and air fry for 10-12 minutes at 450F, tossing and checking halfway

  3. Bring a small pot of water to a boil to cook the gnocchi

  4. Blend together red pepper sauce ingredients: cashews, roasted red peppers, tofu, lemon juice, nutritional yeast, olive oil, and salt until smooth and creamy

  5. Prepare pesto by finely chopping fresh basil and mixing it in a bowl with olive oil, lemon juice and salt

  6. Heat red pepper sauce in a pan on medium heat

  7. Once sauce is warm and gnocchi is cooked, add gnocchi to the sauce and stir well until covered, adding gnocchi water if needed to loosen

  8. Top with crispy lentils and homemade pesto and serve
