Mix all ingredients in a glass jar or bowl. Whisk or shake vigorously to emulsify.
Pour over cubed meat (chicken, pork, or lamb are traditional). Use 1 cup of marinade per 1 to 1.5 lbs of meat.
Marinate covered in the refrigerator for at least 24 hours, but ideally 48 for best flavor.
Thread marinated meat onto skewers and grill until fully cooked and lightly charred.
Serve on Italian bread or a sub roll—no toppings needed. Traditionalists eat them plain.
