Blend cottage cheese, eggs, pumpkin purée, vanilla extract, and honey or maple syrup until smooth.
In a bowl, whisk together almond flour, cinnamon, pumpkin spice, baking powder, and salt.
Combine the wet and dry mixtures until just combined, forming a thick batter.
Spread the batter evenly in the prepared baking dish.
Bake for 25–30 minutes until a toothpick comes out clean.
Cool completely on a wire rack, then slice into bars and serve.
