Mix the apples, lemon juice, light brown sugar, coarse salt, flour, and white sugar together.
Pour the brown butter over the apple mixture and stir to combine.
Mound the apples into the pie crust.
Place the top crust on the pie, leaving a ½ inch overhang, and crimp the edges.
Cut a star vent in the top of the pie.
Brush the top with egg wash and sprinkle with sanding sugar.
Chill the pie well before baking in a preheated oven.
