  1. Cook the eggs

  2. Hard boiled eggs: 9–11 min → cooled in ice water

  3. Soft boiled eggs: 5–6 min → cooled in ice water

  4. Peel the 7 eggs

  5. Creamy base

  6. Mash the 4 hard boiled eggs in a bowl

  7. Add the mayonnaise, ketchup, dashi and nutmeg

  8. Season with salt + white pepper

  9. Mix to obtain a smooth, fragrant and slightly spicy filling

  10. Assembly

  11. Spread a nice layer of the preparation on a slice of bread

  12. Place the whole soft boiled egg in the center (or its two halves)

  13. Cover with the other slice

  14. Press lightly and wrap in film
