Cook the eggs
Hard boiled eggs: 9–11 min → cooled in ice water
Soft boiled eggs: 5–6 min → cooled in ice water
Peel the 7 eggs
Creamy base
Mash the 4 hard boiled eggs in a bowl
Add the mayonnaise, ketchup, dashi and nutmeg
Season with salt + white pepper
Mix to obtain a smooth, fragrant and slightly spicy filling
Assembly
Spread a nice layer of the preparation on a slice of bread
Place the whole soft boiled egg in the center (or its two halves)
Cover with the other slice
Press lightly and wrap in film
