In a resealable bag, combine chicken tenderloin with pickle juice, salt, pepper, paprika, garlic powder, and onion powder. Marinate in the fridge for at least 30 minutes.
Blend the Quest Chips, corn starch, and parmesan into a fine crumb mixture and place on a shallow plate.
Pour egg whites into a separate bowl.
Remove chicken from marinade. Dip each tender in egg whites, then coat thoroughly in chip mixture.
Place breaded tenders on parchment-lined baking sheet.
Air fry at 400°F for 8 minutes.
Serve hot with your favorite dipping sauce.
