Bone-in Country Spare Ribs in Beer and Tomato Sauce

    Salad

  1. Add water to pot or deep skillet and bring to boil

  2. Tie ribs around a box grater, bones out, and boil first side in water for 15 minutes, flip and boil second side for another 15 minutes

  3. Remove ribs, untie and cut into individual pieces and coat in dirty flour

  4. In a large, heavy skillet over medium high heat, melt butter and fry the ribs on both side until dark brown. Move ribs to a plate

  5. Add onions to same skillet, and cook until starting to sweat

  6. Add mushrooms and cook until they start releasing juices

  7. Add spices

  8. Add spinach and cook until wilted.

  9. Return ribs to skillet and add beer

  10. Lower heat and simmer, covered, for 20 minutes

  11. Add tomato sauce and sprinkle scallions on top

  12. Simmer, covered, for another 20 minutes

  13. Remove from heat and serve with sides and salad

Salad

  1. Add first 5 ingredients for salad into a bowl, mix well.

  2. Drizzle with Balsamic glaze and serve with the ribs.
