Vietnamese-Style Meatloaf (Chả)
  1. Preheat oven: Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly oil a loaf pan.

  2. Mix the glaze: In a small bowl, whisk together 2 tablespoons hoisin sauce (for glaze), 1 tablespoons Sriracha (for glaze), 1 tablespoons fish sauce (for glaze), and 1 tablespoons lime juice (for glaze). Set aside.

  3. Combine the meat mixture: In a large bowl, combine 1 pounds ground beef and 1 pounds ground pork. Add 3 tablespoons fish sauce, 1 tablespoons soy sauce, 1 tablespoons sugar, 2 teaspoons freshly ground black pepper, 3 garlic cloves, minced, 2 shallots, finely minced, 2 tablespoons lemongrass, finely minced (tender inner part only), 2 large eggs, 0.3 cups breadcrumbs, 0.3 cups fresh cilantro, chopped, 3 tablespoons scallions, thinly sliced, and 1 teaspoons sesame oil. Mix with your hands until everything is just combined — don't overwork it.

  4. Shape the loaf: Transfer the mixture to your prepared baking sheet and shape into a rectangular loaf about 9 inches long and 5 inches wide. If using a loaf pan, press the mixture evenly into the pan.

  5. Glaze and bake: Brush half the glaze over the top and sides of the loaf. Place in the oven and bake for 35 minutes.

  6. Second glaze: Remove the meatloaf, brush with the remaining glaze, and return to the oven for another 15–20 minutes until the internal temperature reaches 160°F (71°C) and the top is caramelized and slightly charred at the edges.

  7. Rest and serve: Let the meatloaf rest for 10 minutes before slicing. Serve with steamed jasmine rice, pickled daikon and carrots, fresh herbs (mint, cilantro, Thai basil), and nước chấm dipping sauce if you have it.
