Dip each chicken breast into the beaten eggs, then press into the Parmesan breadcrumb mixture until fully coated.
Place the coated chicken breasts on the sheet pan. Arrange the cherry tomatoes and your chosen vegetables (broccoli, green beans, or zucchini) around the chicken.
Drizzle the olive oil over the veggies and sprinkle with salt and pepper to taste.
Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
Serve warm with a squeeze of lemon for extra flavor, if desired.
