In a large bowl, sift the flours and add the yeast as well as the salt and sugar, combine and make a well in the centre.
In a mixing jug add the water along with the cup of oil and stir to combine. Reserve an additional cup of water to help you bring the dough together.
Add the water mixture to the dough gradually. Using a wooden spoon begin to combine the flour and water gently ensuring most of the water and flour has come together into a shaggy mixture. If you need to, add the remaining cup of water to ensure no flour is left in the bowl. Scrape the sticky dough off the wooden spoon and begin to knead the mixture with your hands for approximately 5 minutes, if you feel restricted you can turn the dough out onto a floured surface otherwise keep working in the bowl. The dough should be moist and sticky but at a point where you can handle it easily.
If you need to add more water then do so but no more than ½-1 cup.
Continue to knead and incorporate the dough until all the water and flour has been combined. If the dough is too sticky add some flour.
