Vegan Green Lentil Meatballs
  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, prepare the flax egg by mixing ground flaxseed with water. Let it sit for a few minutes until it thickens.

  3. In a food processor, combine cooked green lentils, breadcrumbs, chopped onion, parsley, minced garlic, flax egg, dried oregano, dried thyme, salt, and pepper. Pulse until the mixture comes together.

  4. Scoop out portions of the mixture and roll them into meatballs. Place them on a baking sheet lined with parchment paper.

  5. Brush the meatballs with olive oil and bake in the preheated oven for 20-25 minutes or until they are golden brown and cooked through.

  6. Serve the lentil meatballs with marinara sauce or your favorite dipping sauce.
