Gummy Kohakutou Candy
  1. Combine the agar agar and water in a saucepan and let sit for 5 minutes.

  2. Turn the heat to high and bring to a simmer, stirring constantly to prevent lumps.

  3. Cook for 2-3 minutes, then add the sugar and cook for another 2-3 minutes.

  4. Turn off the heat and add the candy flavor oil and citric acid.

  5. Divide the mixture into thirds and color each portion with airbrush colors.

  6. Pour the colored mixtures into a greased 8x8 glass dish, creating swirls and designs.

  7. Refrigerate for 1-2 hours until firm.

  8. Remove from the fridge and cut the candy into crystal shapes using a sharp knife.

  9. Place the cut crystals on a wax paper-lined baking sheet.

  10. Let the crystals sit out for 4 days, flipping them over after 2 days.

  11. Once fully dried, decorate the crystals with luster dust mixed with a clear alcohol or extract.
