Preheat oven to 325F.
Grab 3lbs chuck roast and season both sides of beef with 3-4 generous pinches salt, pepper, 1 packet of taco or fajita seasoning. Rub this on all sides. Then place it at the bottom of an oven safe dish with a lid.
Add 1 thinly sliced yellow onion next to the beef along with 4-5 minced garlic cloves
Pour 17-20z beef broth and add 2 chipotle adobo peppers (from the can) for some flavor.
Cover the pot/dish and place in the oven at 325F for 4hrs. If your meat is more than 3lbs, I go always go about 1 hour per pound + an additional 1 hour. So if it's 3 lbs go for 4 hrs, etc.
After 4hrs, take it out of the oven, shred using two forks, mix well with the drippings, then put back in the oven at 425F for 30-40 mins. Mix again when you remove from the oven.
