Zucchini Slice
  1. Preheat oven to 180°C and grease a slice tin with butter.

  2. Place sultanas in a bowl and cover with hot water to soak.

  3. In a mixing bowl, combine walnuts, raw sugar, lemon zest, zucchini, eggs, ground cinnamon, plain flour, baking powder, salt, and pitted dates. Mix well.

  4. Drain the soaked sultanas and add them to the mixture.

  5. Pour the mixture into the prepared slice tin and top with extra walnuts, zucchini slices, and dates if desired.

  6. Bake in the preheated oven for 30-35 minutes or until golden brown and cooked through.

  7. Allow the zucchini slice to cool before slicing and serving.
