Imperfect Pistachio Date Candies
  1. Soak 12 medjool dates in boiling water for ten minutes

  2. Drain the dates and mash with a fork into caramel

  3. Add 1 cup chopped pistachios and ½ cup almond flour to the mashed dates

  4. Roll the mixture into balls

  5. Coat the balls in ¾ cup melted chocolate chips mixed with 1 tablespoon coconut oil

  6. Place on parchment lined pan and freeze for 20 minutes

  7. Drizzle remaining chocolate over the candies

  8. Sprinkle salt and leftover pistachio dust on top

  9. Store in fridge in an airtight glass jar
