Melt the coconut oil, sugar, cinnamon, and maple syrup gently until just combined.
Blend in the very ripe bananas off the heat.
In a mixing bowl, add the oats, seeds, nuts, and salt.
Pour the banana mixture over the oat mixture and mix to combine.
Arrange the mixture in a single layer on a lined baking tray.
Bake at 160°C for around 30 minutes, until gently golden brown and crisp throughout.
Cool the granola on a wire rack until completely cold.
Break the granola into small clumps and boulders.
Store the granola in an airtight container for up to 3 weeks.
