In a clean bowl, combine all purpose flour, spice powders, baking powder and baking soda. Mix well with a clean whisk till everything is distributed evenly.
In a mixing bowl, cream together butter, brown sugar and granulated sugar till creamy. Once combined, add in egg and whisk till the egg combines well.
Now add maple syrup and vanilla extract and whisk everything until homogenous.
Slowly add the dry ingredients and fold the cookie dough with a spatula.
Divide the cookie dough into equal sized balls or 1 ½ tablespoons per cookie.
Roll each portion into smooth balls and arrange them in the cookie sheet. In a small bowl, mix together sugar and spice powder.
Roll the cookie dough balls in the spice sugar and place them in the parchment lined baking sheet pan.
Chill the cookie dough balls in the refrigerator for 30 minutes or overnight. Once you are ready to bake, take it out and bake the cookies.
Gently flatten the cookie dough balls with the bottom of a measuring cup or bottom of a glass.
Preheat the oven to 180C or 350F. Bake the cookies in the preheated oven for 10-12 minutes.
Once the cookies start to brown on the edges and are done, remove from oven and cool them on a wire rack.
Once they are cooled, top them with remaining spice sugar and serve.
