Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Season chicken with salt and pepper on both sides.
In a skillet over medium heat, add olive oil and sear chicken for 2–3 minutes per side until golden brown. Transfer to baking dish.
In a bowl, whisk together honey, balsamic vinegar, and thyme or rosemary. Pour over the chicken.
Sprinkle cranberries over and around the chicken.
Bake uncovered for 25–30 minutes or until chicken is cooked through and sauce is bubbly.
In the last 5 minutes of baking, sprinkle feta over the chicken to warm and soften.
Garnish with chopped parsley before serving.
