One Portion Spanakopita Pasta
  1. Start pasta water.

  2. While water is heating up to a boil, in a small bowl combine egg, feta, lemon juice and spices. Set aside.

  3. Drop pasta once water is boiling, cook according to package instructions.

  4. In pan on medium low heat, add in olive oil and onion. Cook for about 3-5 minutes before adding spinach.

  5. Once pasta is cook, reserve about a ½ c pasta water.

  6. Pour a couple teaspoons of pasta water slowly into egg mixture, stirring constantly to temper the egg.

  7. Put drained pasta in with spinach and onions.

  8. Add in butter, salt and pepper.

  9. Add a little bit of pasta water in and stir.

  10. Then add egg mixture.

  11. Stir for about a minute to fully incorporate.

  12. Add more pasta water to get your desired sauce consistency.
