Chocolate Fudge Loaf Cake
  1. Preheat the oven to 300°F.

  2. Grease a 9×5.5-inch (1.5qt) loaf pan with baking spray and line it with parchment paper. Set aside.

  3. In a medium saucepan over medium-low heat, melt the chopped chocolate and butter until smooth. Set aside and allow to cool.

  4. In a large bowl, combine the dry ingredients: flour, sifted cocoa powder, baking soda, baking powder, granulated sugar, light brown sugar, and salt. Whisk until fully incorporated.

  5. In a separate bowl, whisk the eggs with lemon zest. Add the remaining wet ingredients, including the cooled melted chocolate, and stir until smooth.

  6. Combine both mixtures until you have a thick and luscious batter.

  7. Gently fold in ½ cup of the chocolate chips into the batter until evenly distributed.

  8. Pour the batter into the prepared loaf pan and smooth out the top using an angled spatula.

  9. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out mostly clean.

  10. Remove the cake from the oven and immediately sprinkle the remaining ½ cup of chocolate chips on top.

  11. Allow the cake to cool in the pan for 10 minutes, then transfer it to a cooling rack. Enjoy while warm!
