Peel and dice your potatoes, then place them in a bowl of cold water and let them soak for at least 2 hours.
Drain the potatoes and spread them onto a parchment-lined sheet pan. Use paper towels to blot them dry really well.
Add olive oil, garlic powder, salt, and pepper (or whatever seasoning you love).
Roast at 400°F until the potatoes are fork tender and just starting to brown.
Take them out of the oven and smash each one.
Return to the oven and roast about 15 more minutes until deep golden and crispy.
