In a hot pan add your chicken mince and break it down as much as possible. It'll need a lot of breaking down as it tends to stick together. Let it slightly brown
Add your onion, garlic and ginger alongside salt and pepper. Cook on high heat for 3-4minutes. Stirring continuously.
Cook your noodles according to instructions and drain.
Add your spinach, basil, noodles and remaining ingredients. Mix together well and stir to get a slight char on the noodles. Roughly 3-4 minutes. Taste and adjust any seasoning to you're likely. Add chilli oil.
Serve and enjoy!
