  1. Preheat oven to 180°C

  2. Cook sweet potatoes until soft (microwave, roast, or air fry)

  3. In a greased 9-inch baking dish, smash sweet potatoes to cover the base

  4. Add broccoli, peas, and red onion on top

  5. Pour over whisked eggs and season with salt, pepper, and chili flakes

  6. Sprinkle cheese on top

  7. Bake 30–40 minutes, until golden and set
