In a large bowl, combine the base ingredients and stir until everything is beautifully coated and sticky.
Spoon the mixture into bar molds or a lined tray. Press firmly with a spatula to create even, compact layers.
Melt the dark chocolate, then spread a thin layer over the top of each bar.
Place the bars in the freezer for at least 1 hour, or until firm and perfectly set.
Once frozen, remove the bars from the molds and sprinkle lightly with fleur de sel.
