  1. Start by slicing your beef steak into thin strips. Pop it into a bowl and coat it with cornflour, soy sauce, water, jerk seasoning, and honey. Give it a good mix—like you're dressing a salad, but way more delicious.

  2. Heat a large pan or wok over medium-high heat. Add a little oil, then toss in the spring onions and peppers. Let them sizzle for about 5 minutes until they start to soften but still have some crunch.

  3. Now, add the garlic, ginger, and chilli. The smell? Incredible.

  4. Time for the beef. Toss it in, keeping the marinade aside for now. Stir-fry for a few minutes until the beef is browned and smelling amazing.

  5. Pour in the reserved marinade, stir everything together, and let it cook for a couple more minutes until the sauce thickens slightly.

  6. Remove from the heat and serve up hot with steamed rice. Maybe garnish with a bit of fresh coriander if you’re feeling fancy.
