Preheat oven to 350°f
Cut potatoes into medium chunks and toss with olive oil, garlic powder and paprika.
Bake for 25 minutes or until preferred softness reached
Remove the potatoes from the oven and, while still hot, sprinkle with lemon zest and stir
Cool for a few hours or overnight
Sprinkle potatoes with lemon juice and stir
Add to potatoes Greek yogurt, mayonnaise (if using), black garlic, cumin seeds, dried oregano and salt (if using), and stir
Eat right away or refrigerate
Optional: serve with crushed BBQ potato chips on top
