Measure the bread flour into a bowl
Add the sugar to the flour
Add the fresh yeast to the mixture
Add the salt
Pour in the whole milk
Crack in 1 eggs
Bring ingredients together with a wooden spoon
Transfer to a kitchen aid mixer and knead for 10-15 minutes until gluten develops
Add 30g softened butter and knead for another 2 minutes
Place dough in a greased bowl, cover, and let rise at room temperature for 1 hour until doubled in size
Deflate the dough and divide into small brioche rolls
Bake at 350°F for 20 minutes
Turn the buns in the oven and bake for another 10 minutes until golden brown
