  1. Mash the bananas and mix them with eggs and oil.

  2. In a separate bowl, whisk together flour, granulated sugar, vanilla instant pudding mix, baking soda, and salt.

  3. Pour the dry ingredients into the banana mixture and mix by hand until just combined.

  4. Fold in chunks of dark chocolate and unsweetened coconut flakes.

  5. Pour the batter into a buttered and floured Bundt pan.

  6. Bake until the cake is richly browned and springs back when pressed.
