Asian Peanut Chicken Salad
  1. Lay Napa cabbage on cutting board, split down the middle through the core, then lay on cut side and thin slice

  2. Cut bell pepper straight through the middle, clean out seeds, then thin slice

  3. Shred carrots on a box grater or thin slice on bias using claw grip

  4. Split cucumber down the middle and slice on a bias

  5. Add all prepared vegetables to a mixing bowl

  6. Pick apart rotisserie chicken or prepare marinated chicken thighs and add to salad

  7. Microwave garlic clove and ginger together

  8. Mix microwaved garlic and ginger with peanut butter, soy sauce, rice vinegar, chili crunch oil, and sesame oil to create dressing

  9. Pour dressing over salad and toss to combine

  10. Garnish with toasted sesame seeds, cilantro, green onions, and a squeeze of lime

  11. Serve immediately
