Slice the potatoes and soak them in water for 20 minutes to remove excess starch.
Mince the garlic.
Marinate the minced pork with 1 tsp of salt and some pepper.
Heat a non-stick pan with a bit of oil over medium heat.
Add the minced garlic and stir-fry until fragrant.
Add the marinated minced pork and stir-fry until cooked through.
Add potatoes, 2 cups of water, 3 tbsp of oyster sauce, 2 tbsp of low sodium light soy sauce, 1 tsp of sugar, 1 tbsp of sesame oil, 2 tbsp of premium dark soy sauce, and 1 tbsp of Chinese cooking wine.
Stir and let the mixture simmer until the potatoes are tender, about 15 minutes.
If the sauce is too thin, add some cornstarch solution to thicken it up.
Serve hot.
