Roast Vegetable Pie
  1. Preheat oven to 200°C

  2. In one tray mix the butternut and sweet potato with salt, pepper, mixed herbs and olive oil. Add to the oven to roast until soft, checking every 30mins.

  3. In another tray add the onions and garlic, with

    salt, pepper, olive oil and 2 tbs brown sugar. Add to the oven, stiring every 15mins until soft and caramelised.

  4. When onions are done add 1tbs of worstershire sauce and balsamic vinegar, and mix well.

  5. To assemble the pie lay out 1 sheet of pastry. Add roasted pumpkin and sweet potato, then nestle the camembert in the middle. Top the camembert with the caramelised onions. Lay the second sheet of pastry over, then wash with the egg. Cut a few small vents into the top layer

  6. Cook in the oven for 30mins or until golden.

  7. Rest for 5mins before cutting and serving.
