Apply a thin layer of Dijon mustard to the ham as a binder
Season the ham generously with barbecue rub, getting into all nooks and crannies
Place ham on a baking sheet
Preheat smoker to 275 degrees
Combine 1 cup apple juice, 1-½ tbsp apple cider vinegar, 1 tbsp Dijon mustard, ½ cup caramel dip, and 1 tbsp BBQ rub in a pot
Heat glaze mixture until fully incorporated, stirring occasionally
Place ham in smoker and smoke for about 2 hours
After 30 minutes of smoking, begin glazing the ham with the caramel apple mixture
Continue smoking until ham reaches 145°F internal temperature
Pour remaining glaze on top and smoke for 15 more minutes until tacky
Remove from smoker, carve, and serve
