*Enough racks of side ribs to feed the group (4 + bones each)
*Apple wood chunks
*Mustard
*Rib rub of your choosing
Begin heating smoker to 235f
Trim up ribs, removing any excess fat or small bits that stick out and will burn.
Remove silver skin
Smear mustard on ribs, then cover in rib rub. Flip ribs to treat both sides.
When smoker reaches 235f, add Apple wood chunks to fire basket
Add ribs bone side down
Smoke for 4 - 5 hrs
Cover ribs with BBQ sauce, all sides
Smoke for up to 1 more hours. Ribs are done when they pass the bend test.
