Add ingredients to bread machine
Start with the warm milk, egg, and melted coconut oil.
Add flour, sugar, and salt on top.
Make a small well in the flour and place the yeast inside (keep it from touching the liquids at first).
Run the Dough Cycle
Set your bread machine to the Dough setting (about 1.5 hours for kneading and the first rise).
Shape the buns
After the dough cycle finishes, turn the dough onto a lightly floured surface.
Divide into 8 equal portions and shape them into balls. Flatten slightly into discs for hamburger buns.
Let them rise again
Arrange on a baking sheet lined with parchment paper.
Cover with a towel and let them rise for 30-45 minutes until puffy.
Preheat oven
Preheat to 375°F (190°C).
Add toppings (optional)
Brush the tops with the egg wash for a shiny finish.
Sprinkle with sesame or poppy seeds if desired.
Bake for 12-15 minutes until golden brown.
Cool
Let them cool on a wire rack before serving.
