Preheat oven to 400˚F.
Slice the top off of the garlic, exposing the cloves.
Drizzle the diced sweet potato and garlic with olive oil and season with a little salt.
Roast for 30-35 minutes, until potatoes are fork tender.
Add all ingredients to a blender or food processor and blend until completely smooth.
If your blender comes with a tamper, use it! If you’re having trouble blending, add a little more olive oil as needed.
