Add boneless skinless chicken thighs to slow cooker
Add soy sauce, dark soy sauce, honey, mirin, minced ginger, and minced garlic to the slow cooker
Pour cornstarch slurry (cornstarch mixed with cold water) over the ingredients
Mix until completely combined
Cook on high for 4-5 hours OR on low for 5+ hours until sugar starts to caramelize on the edges of the chicken and it is perfectly tender
If sauce is too liquidy, remove liquid and simmer in a pan until reduced and thick, or let cool in a separate bowl to thicken
Serve over steamed sushi rice, rice and cauliflower rice blend, in jicama wraps, or as lettuce wraps
