The Best Gluten-free Bagels (with Protein!)
  1. Whisk the egg for egg washing a small bowl and set aside

  2. Preheat oven to 400 degrees F and line a baking sheet with parchment paper and grease well

  3. In a large bowl, mix together flour, flaxseeds and baking powder

  4. In a medium bowl, mix together yogurt and cottage cheese

  5. Add in the yogurt mixture to flour mixture and mix all together (if dough is looking thick, add a tablespoon of water as needed)

  6. Mix together until fully combined then lightly flour a surface and use your hands to knead and roll the dough into a big ball

  7. Divide dough into 6 small portions then roll out each portion into a log about 6-7inches (kind of like a hot dog!) then connect the end of the log to form the bagel

  8. Add each bagel to lined baking sheet, leaving space between as they will expand

  9. Brush the top of the bagels with egg wash then add seasoning on top if using

  10. Bake in oven for about 22 minutes or until slightly golden

  11. Allow the bagels to cool then slice, toast and enjoy!
