Mix 1 & ¼ cup warm water with 1 packet yeast and 2 tbsp sugar, let sit for 5 minutes to activate yeast
In a large bowl, combine 2 & ½ cup gluten-free flour and at least 1 tbsp salt
Add 2 eggs, 3 tbsp oil, and 1 tbsp vinegar to the flour mixture
Add your chosen binder (flax eggs, mashed potatoes, or powdered oats)
Mix all ingredients together, adjusting water or flour as needed to achieve bread dough consistency
Oil a pan and transfer dough to it
Let dough proof for about 30 minutes until risen
Bake at 375°F for 50 minutes until golden brown
Let bread cool completely before cutting
