Matilda Chocolate Cake
  1. Preheat oven to 350°F (175°C). Grease and line three 6–7" pans.

  2. Whisk flour, sugar, cocoa, baking soda, baking powder, and salt.

  3. In another bowl, whisk buttermilk, oil, eggs, and vanilla.

  4. Add dry ingredients to wet, mix, then stir in hot coffee. Batter will be thin.

  5. Divide into pans and bake 25–27 minutes. Cool completely.

  6. For frosting, melt butter, chocolate, and cream in a saucepan. Whisk in powdered sugar, cocoa, salt, espresso, and vanilla.

  7. Cover surface with plastic wrap (touching the surface) and cool 30 minutes, then chill 1–2 hours until thick.

  8. Level cakes if needed. Layer with frosting, then frost the outside.

  9. Finish with flaky sea salt.
