Heat the milk in a pot until it's almost boiling
Stir in the lemon juice and remove from heat
Let it sit for a few minutes until the milk curdles
Strain through a sieve lined with cheesecloth and rinse with cold water
Squeeze out the excess liquid
Add the curds to a blender and blend until smooth and creamy
Mix Greek yogurt, flour, baking powder, and salt until a dough forms
Divide into two pieces, roll out and shape into bagels
Brush with egg wash and top with everything bagel seasoning
Bake at 375°F for about 20 to 25 minutes until golden
