Slice 2 crumpets in half.
Spread the base of the crumpets with 1 tsp each raspberry or cherry jam.
Place the other half of the crumpets back on top.
Prepare the frangipane by mixing 25g ground almonds with 5g softened butter, ½ tsp almond extract, 2 tsp runny honey/maple syrup (or 1 tsp granulated sugar) & 1 medium egg.
Spoon the frangipane on top of the crumpets then scatter over a handful of flaked almonds.
Air fry at 170C or oven bake at 170C fan/190C for 8-10 mins or until golden.
Mix 1 tsp icing sugar with ¼ tsp almond extract & a few drops of cold water until it is runny enough to drizzle, then drizzle on top of the crumpets.
